Vegetarian Chili

This is the perfect meal for a busy day! Just prep your veggies ahead of time, maybe even the night before. Throw it into your slow cooker or pressure cooker and voila!

It's easy, nutritious and delicious!

Ingredients:

4 cups butternut squash, cut into 1-inch pieces 1 small onion, chopped 1 red pepper, chopped 1 540 ml can black beans 1 540 ml can chickpeas 1 can crushed tomatoes 1 tbsp chili powder 1 tsp oregano 1 tsp cumin 1/2 tsp salt 1 cup vegetable stock 1/2 cup barley or grain of choice

Add all ingredients to slow cooker. Cook on low for 6-8 hours or 18 minutes in a pressure cooker.
