4 cups butternut squash, cut into 1-inch pieces 1 small onion, chopped 1 red pepper, chopped 1 540 ml can black beans 1 540 ml can chickpeas 1 can crushed tomatoes 1 tbsp chili powder 1 tsp oregano 1 tsp cumin 1/2 tsp salt 1 cup vegetable stock 1/2 cup barley or grain of choice
Add all ingredients to slow cooker. Cook on low for 6-8 hours or 18 minutes in a pressure cooker.
