This can be an easy prep, make-ahead supper Serves 6

Ingredients

6 bell peppers of choice 2 cups rice 1 small can black beans 1 1/2 cups tomatoes, chopped 1/4 cup red onion, chopped 1 jalapeno pepper, chopped (optional

Dressing

1 clove garlic 1 cup cilantro 1/4 cup plain greek yogurt 1/2 avocado 1 tbsp chili powder 1 tsp ground cumin 1/2 tsp salt fresh ground pepper juice of 1 lime 2 tbsp extra virgin olive oil
