No Excuses!! Chicken Curry

You won't believe how easy and quick this recipe is! AND... it is DELICIOUS!!

I know how hectic life can be with a family and all the crazy running around that happens on a daily basis. If you plan your meals and have some of the prep work of cutting and chopping done ahead of time, this supper is ready in a flash!

Serves 6


2 lbs chicken thighs 1 tbsp clarified butter 1 medium onion, chopped 2 tbsp curry paste 2 cans coconut milk 2 tbsp fish sauce 1 tbsp apple juice 4 cups broccoli or cauliflower florets, or a mixture of both 1 medium red bell pepper, cut into strips juice of 1 lime 1/2 cup cilantro, chopped 1/4 cup fresh basil, chopped

2 cups cooked rice
