Roasted Vegetables and Garlic Shrimp Pasta
This is great meal idea and it is chock full of vegetables.
The garlicky shrimp mixed with the sweet tasting roasted veggies is a perfect quick and nutritious weekday meal!
Serves 6 people
1 yellow, orange, and red pepper cut into 1-inch size pieces 1 small red onion, chopped 2 cups mushrooms, sliced 1 1/2 cups cherry tomatoes, sliced in half 2 tbsp Italian seasoning 1 tsp salt 1/4 extra virgin olive oil 1 tbsp ghee or clarified butter 2 cloves garlic, crushed 3 cups shrimp, peeled, deveined and tails on pasta of choice, enough for 6 people cooked as per package instructions
