Greek Shrimp with Tomatoes and Feta

Serve this with your choice of vegetables and/or rice.

Serves 4-6 people


4 tbsp olive oil

2 shallots, minced

2 cloves garlic, minced

1/2 cup vermouth or dry white wine

6-8 plum tomatoes, chopped or 1 can (14 oz/455g ) tomatoes, drained and finely chopped

2 Tbsp fresh crumbled oregano or 1 Tbsp of dried

dash of cayenne pepper

dash of paprika

1 cup feta cheese, crumbled

2 lbs large shrimp, shelled and deveined with tail on

1/4 cup fresh mint, chopped (optional)
