Mole Meatballs with Wilted Cabbage

I'm always trying to keep my meals interesting and in season

Spices like cinnamon and clove take this recipe to the "comfort foods" category.

I used moose in this recipe but you could do it with lamb or pork.

Don't let the lengthy list of ingredients scare you away from this very delicious and nutritious meal!


MOLE SAUCE: 2 tsp olive oil 1 medium onion 1 clive of garlic 2 tsp chili powder 1/2 tsp salt 1/4 tsp ground cinnamon 1/8 tsp ground cloves 1/4 tsp ground black pepper 1 tbsp tomato paste 1 tbsp unsweetened cocoa 2 tbsp raisins 1 tbsp sesame seeds 3/4 cup tomato sauce 1/2 cup chicken stock or water 2 tbsp almond butter

MEATBALLS: 1 1/2 ponds ground meat of your choice 1 tsp chili powder 1 tsp salt 1/4 tsp black pepper 1/4 tsp ground coriander

WILTED CABBAGE: 1 tbsp olive oil 1/2 large head of cabbage Salt and pepper to taste
