Fricassée of chanterelles in a coconut cream sauce with pasta

We love to forage for mushrooms this time of year and this is a great recipe to try if you have any type of mushroom. In this recipe I have used golden chanterelles but you can use your favourite mushroom.
Mushrooms are truly magical as they are a superfood that provides us with cancer fighting properties. They are considered to be anti angiogenic, which means that they prevent the formation of blood vessels that tumours need to grow.
So, include mushrooms in your diet whenever you can!
1 1/2 cups of mushrooms of your choice 1 onion, chopped 3 garlic cloves, minced 1/4 white wine or vermouth 1 can coconut milk 1 tbsp dijon mustard 1 1/2 tsp dried oregano salt and pepper to taste pasta to serve 4-6 people
