Roasted tomato penne pasta

I found this recipe from a Canadian Living magazine about 21 years ago when I was a new mother and when cooking seemed daunting to me. I have no idea where the copy of that magazine is today and I'm sure that the recipe has probably changed a bit over the years but the result remains delicious!

It has become a family favourite and I have shared it with many friends over the years!


10 Roma tomatoes, halved 10 cloves garlic 1 cup of fresh packed basil 3/4 - 1 cup extra virgin olive oil 1 cup crumbled feta cheese, divided Penne pasta noodles for 4 people Salt and pepper to taste

Serves 4 people
