Greek Chicken Kebabs
This quick and easy summer meal is sure to win your heart. It's perfect for those warm days when cooking indoors is not an option. It is delicious served with a Greek salad.
1 1/2 pounds of boneless skinless chicken breast, cut into 1-inch chunks
4 tablespoons olive oil
4 garlic cloves, crushed
1 teaspoon dry mint
1 tsp dried oregano
salt and pepper
1 bunch fresh mint
2 small zucchini, cut into 1-inch chunks
1 small red onion, cut into wedges
1 red or yellow pepper cut into 1-inch chunks
1 lemon, cut into 8 wedges
1. Mix the oil, garlic, mint and oregano, a pinch of salt and marinate the chicken for 30 up to 8 hours in advance.
2. Thread the chicken, zucchini, mint leaves, bell pepper, onion and lemon wedge on 8 metal skewers. Skewers can be assembled up to 2 hours before cooking and stored in the refrigerator.
3. Cook on preheated BBQ, turning every 5 minutes until chicken is cooked through, about 15 minutes.
Serve with a Greek salad
