Knife skills 101

You know the saying "you are what you eat"? Maybe it should be you are what you cut because if you're not cutting your food, you're not eating the foods that you cut. It all starts in the kitchen and basic knife skills are the foundation of cooking whole, real foods! In this video, I share with you the knife skills that I was taught recently.

Lemon Mustard Pepper Chicken

Do you ever have days where there's just not enough time to do everything that you have to do? Well, this recipe is really easy to put together so that you can just walk away and let the Instant pot or slow cooker do the work for you! Ingredients 2 lbs chicken, cut into 2 inch pieces 3 bell peppers of choice, chopped 1/4 cup red onion, chopped 2 cups chicken stock 3/4 cup dijon mustard 2 tbs tamari or say sauce 1/4 cup sugar juice of 1 lemon

Sweet Potato Shepherd's Pie

Growing up, traditional Shepherd's Pie was a regular occurrence at the dinner table. My mom use to cook the meat with onion soup mix which was delicious but very high in salt and preservatives. This is a little healthier version that should make everyone happy! Ingredients serves 4-6 people For the topping: 4 medium sweet potatoes, peeled and cut into 1-inch pieces 3 tbsp coconut oil 1/2 tsp salt 1/2 tsp cinnamon 1/4 tsp nutmeg 1/8 tsp cayenne pepper For the filling: 1 tbsp extra-virgin olive oil 2 large carrots, diced 2 celery stalks, sliced 1 medium onion, chopped 1 tsp salt 2 garlic cloves, minced 3/4 tsp ground chipotle pepper 1/2 tsp dried oregano 1/2 tsp cumin 1/

Chickpea Nuggets

I'm always trying to find new recipes and ideas to add more plant-based meals into our diets. This was a huge success with my family! It's quick, easy and supper healthy.
